Una de las muestras de aj\u00ed m\u00e1s antiguas de las que se tiene noticia proviene de aqu\u00ed, de la localidad de Monte Verde, y esa tradici\u00f3n se fue enriqueciendo con la cocina de los invasores Inca, los invasores espa\u00f1oles, y con las tradiciones culinarias del cercano Per\u00fa.<\/p>\n<p>El plato emblem\u00e1tico de esta provincia es el delicioso seco de chivo, y su bebida es el jugo de ciruela.<\/p>\n<p>Los ingredientes locales son muy generosos productos del mar: pescados y mariscos, y los no tan conocidos pero no por ello menos excelentes productos de agua dulce.
