Este es un proyecto de World Chefs (ex WACS), que tiene como objetivo\u00a0contribuir a profesionalizar la cocina para contribuir a que tome el sitial que le corresponde en el escenario tur\u00edstico mundial. Lo bueno es que lleg\u00f3 un nutrido y entusiasta grupo en el que tuvimos la alegr\u00eda de reencontrarnos con amigos a quienes no ve\u00edamos desde hace tiempo, y por supuesto de conocer a nuevas Imagen propiedad de World Chefs y Nestl\u00e9.<\/figcaption><\/figure>\n<p>La historia comenz\u00f3 mucho antes, eso s\u00ed.<\/p>\n<h2>El Proyecto<\/h2>\n<p>La Gu\u00eda de t\u00e9cnicas culinarias es una iniciativa de\u00a0<em>World Chefs<\/em>, y proviene de la necesidad de profesionalizar la cocina para contribuir a que tome el sitial que le corresponde en el escenario tur\u00edstico mundial.<\/p>\n<p>El a\u00f1o 2017 es el A\u00f1o Internacional del Turismo Sostenible para el Desarrollo, y queremos estar presentes en las iniciativas de la Organizaci\u00f3n Mundial del Turismo (UNWTO). Debido a la heterogeneidad de la audiencia, tanto en cultura, como en edad como en nivel de instrucci\u00f3n, se ha optado por presentar el material did\u00e1ctico como diversos productos para la transferencia de las c\u00e1psulas de conocimiento para las distintas competencias. En esta etapa hemos hecho \u00e9nfasis en el afiche, ya que comunica en forma r\u00e1pida, concisa y visual, evitando las largas lecturas que dejar\u00edan fuera a parte de la audiencia. La idea es que el material generado y sistematizado est\u00e9 disponible para toda la comunidad, desde los <em>millennials<\/em> y la Generaci\u00f3n Z que est\u00e1n en las aulas e iniciando su vida laboral, hasta los cocineros emp\u00edricos con d\u00e9cadas de experiencia que deciden sistematizar sus conocimientos y obtener reconocimiento por ellos.<\/p>\n<p>El proyecto nos encant\u00f3. Es un proyecto con alma, y se puede hacer mucho en \u00e9l, no s\u00f3lo por Ecuador (donde se entronca perfectamente con las certificaciones SETEC) sino por la regi\u00f3n.
