Estamos constantemente experimentando en la cocina (al menos cuando no hay que producir), y la Nena nos sugiri\u00f3 este video al hablar de torta Opera. Preparemos un alm\u00edbar con el az\u00facar granulada y el agua.<\/li>\n<li>Batimos las claras con el jugo de lim\u00f3n u otro \u00e1cido (aqu\u00ed explicamos el porqu\u00e9) y cuando comiencen a montar, le a\u00f1adimos el alm\u00edbar caliente sin detener la batidora, haciendo que caiga en un chorrito continuo por el lado de la batidora.<\/li>\n<li>A\u00f1adir la esencia de vainilla, si se utiliza<\/li>\n<li>Batir hasta que el merengue vuelva a temperatura ambiente.<\/li>\n<li>Sin detener la batidora, a\u00f1adir de a uno los cubitos de mantequilla. Al principio se va a separar y licuar la mezcla, pero posteriormente va a emulsionar y se afirmar\u00e1.<\/li>\n<li>Una vez que est\u00e9 firme la buttercream de merengue italiano, saborizar. Nosotros utilizamos 1 cucharadita de caf\u00e9 instant\u00e1neo disuelto en dos cucharadas de leche, porque la preparamos para una torta Opera.<\/li>\n<\/ol>\n<h2>Comentarios<\/h2>\n<ul>\n<li>Como toda crema de mantequilla, su mejor forma es a temperatura ambiente.
