Una delicia. Lo que nos gust\u00f3 es la combinaci\u00f3n de canela con az\u00facar morena, que a nuestro juicio llama a la manzana. Tambi\u00e9n nos encanta el hecho de que sean muy poco dulces. Quiz\u00e1 quieras duplicar la cantidad de az\u00facar, pero nosotros no.<\/p>\n<p>Lo interesante aqu\u00ed, al igual que en el caso de los panqueques de masa madre es que el leudado no es tanto por la masa madre sino por la neutralizaci\u00f3n de los \u00e1cidos de la masa madre por el bicarbonato de sodio. Con esto pierde el gusto \u00e1cido de la masa madre y adem\u00e1s sube.<\/p>\n<h3>Ingredientes de los <em>muffins<\/em> de masa madre<\/h3>\n<ol>\n<li>100gr masa madre 100%<\/li>\n<li>1 huevo<\/li>\n<li>1\/4 taza leche<\/li>\n<li>2 cucharadas de aceite vegetal<\/li>\n<li>80gr harina<\/li>\n<li>80gr harina de ma\u00edz (ma\u00edz sabrosa, o similar)<\/li>\n<li>60gr az\u00facar rubia<\/li>\n<li>1\/2cdta sal<\/li>\n<li>1\/2cdta bicarbonato de sodio<\/li>\n<li>1\/2cdta canela en polvo<\/li>\n<li>1 manzana pelada y picada en trozos peque\u00f1os<\/li>\n<li>Aceite para el molde de <em>muffins<\/em><\/li>\n<\/ol>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Precalentar el horno a 210\u00b0C<\/li>\n<li>Aceitar un molde para 6 <em>muffins<\/em><\/li>\n<li>Mezclar los ingredientes h\u00famedos (1 a 4)<\/li>\n<li>En otro bol mezclar los ingredientes secos (5 a 10)<\/li>\n<li>Mezclar los ingredientes secos con los h\u00famedos y remover hasta incorporar, no m\u00e1s de medio minuto<\/li>\n<li>A\u00f1adir la manzana picada<\/li>\n<li>Llenar los moldes hasta el borde, sin excederse, porque crecen al hornear.\n<p><figure id=\"attachment_11776\" molde. Esto es importante porque de lo contrario el vapor de agua hace que queden chiclosos.<\/li>\n<\/ol>\n<p>Es hora de comer.
