La espuma la proveen las claras batidas y se estabiliza con harina precocinada en leche por la v\u00eda de una <em>beurre mani\u00e9<\/em> (o sea, mantequilla amasada).<\/p>\n<p>El resultado es un <em>souffl\u00e9<\/em> delicado, que sube bien, que aguanta unos 15 minutos antes de empezar a colapsar, y que es dulce pero no en exceso. Procedamos<\/figcaption><\/figure>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Precalentar el horno a 200\u00b0C<\/li>\n<li>cubrir el interior de los ramequines con mantequilla, cuidando de no dejar ninguna zona sin enmantequillar, y luego con az\u00facar. Reservar.<\/li>\n<li>Amasar la mantequilla con la harina y la sal. Reservar.<\/li>\n<li>Calentar la leche con 75gr de az\u00facarhasta que comience a hervir. A\u00f1adir la mantequilla amasada y batir hasta que se disperse y luego espese.<\/li>\n<li>Sacar del calor y a\u00f1adir el licor de chocolate troceado, revolviendo hasta derretir e envolventes. Con cuidado para que no se pierda el aire de las claras.<\/li>\n<li>Llenar los ramequines hasta que comiencen a rebalsarse.
