Los d\u00edas 2 y 3 de marzo recorrimos las siguientes localidades con nuestro curso de gastronom\u00eda gratuito:<\/p>\n<ul>\n<li><strong>San Pablo<\/strong>. Adem\u00e1s de los asistentes del mismo San Pablo, lleg\u00f3 gente desde Colonche. Nos dieron almuerzo \ud83d\ude42<\/li>\n<li><strong>Libertador Bol\u00edvar<\/strong>. Los asistentes llegaron desde Manglaralto, Libertador Bol\u00edvar, y otros lugares. Nos dieron un delicioso arroz marinero como para un regimiento.<\/li>\n<li><strong>Chanduy<\/strong>, donde asistieron personas de Chanduy, Pechiche y San Rafael. Se discuten las competencias laborales desde la NTE INEN 2458.<\/li>\n<li><strong>Seguridad e inocuidad alimentaria<\/strong>. Establecemos definiciones y vemos el enfoque de la OMS y de la FAO sobre seguridad e inocuidad en los alimentos.<\/li>\n<li><strong>Contaminaci\u00f3n de alimentos<\/strong>. Revisamos los distintos contaminantes de alimentos, con \u00e9nfasis en la contaminaci\u00f3n bacteriana.<\/li>\n<li><strong>Higiene personal del manipulador de alimentos<\/strong>. En esta primera secci\u00f3n sobre prevenci\u00f3n de la contaminaci\u00f3n revisamos las condiciones de higiene personal a ser observadas por quienes manipulamos alimentos.<\/li>\n<li><strong>Higiene y sanitaci\u00f3n del lugar de trabajo<\/strong>. Extendemos la prevenci\u00f3n de la contaminaci\u00f3n a la higiene y a la sanitaci\u00f3n del lugar de trabajo, utensilios y a un plan de sanitaci\u00f3n.<\/li>\n<li><strong>Etapas del proceso productivo<\/strong>. Desde la compra hasta el servicio, las etapas del proceso y c\u00f3mo mantener la inocuidad alimentaria a lo largo del mismo.<\/li>\n<li><strong>Pr\u00f3ximos pasos<\/strong>. C\u00f3mo seguir aprendiendo.
