De la mano del maestro de ceremonias Edgar Le\u00f3n, que articul\u00f3 todo el evento, nos dio la bienvenida el Ing. Buena la cocina, y la ciencia podr\u00eda haber sido m\u00e1s rigurosa.<\/li>\n<li>Luego un chef brasile\u00f1o explic\u00f3 los <strong>rudimentos del <a href=\"https:\/\/www.le-fort.org\/coccion-lenta-sous-vide-hecho-en-casa\/\"><em>sous vide<\/em><\/a> y de la deshidrataci\u00f3n<\/strong>. Excelente ponencia y excelente expositor.<\/li>\n<li>La tercera ponencia volvi\u00f3 sobre la experiencia de restaurante, con un seco de llama <em>sous vide<\/em>. Nuevamente mejor la cocina que la ciencia.<\/li>\n<li>La cuarta ponencia fue netamente sobre <strong>arquitectura de platos en restaurantes modernos<\/strong>. Muy, muy buena. Proporciones, movimientos, texturas, emplatado.<\/li>\n<li>La quinta, y a nuestro juicio el broche de oro, fue una introducci\u00f3n a la <strong>termodin\u00e1mica en la cocina<\/strong>, utilizando como ejemplo pr\u00e1ctico la criofritura. Muy bien explicado, muy bien escogido el ejemplo y muy buen expositor.<\/li>\n<\/ul>\n<p>Nos encanta poder participar en este tipo de eventos, que contribuyen a mejorar el conocimiento culinario de cocineros e instructores, y ayudan a dar un cimiento m\u00e1s s\u00f3lido a la educaci\u00f3n culinaria, que en Ecuador es principalmente emp\u00edrica.<\/p>\n<p><img data-recalc-dims=\"1\"
