Hablamos de las modas en la cocina, de la novedad y <strong>la falsa novedad<\/strong>, de la <strong>estrategia culinaria del Ecuador<\/strong>, que incluye algunos proyectos en los que nos hemos visto envueltos, y otros temas.<\/p>\n<p>No todo fue hablar, eso s\u00ed. Despu\u00e9s pasamos a hablar de <strong>la presi\u00f3n y el vac\u00edo<\/strong>, saltando directamente a un tema m\u00e1s t\u00e9cnico. Hablamos de ollas a presi\u00f3n y sus usos obvios y no tanto; del vac\u00edo y sus aplicaciones desde un punto de vista un poco m\u00e1s democr\u00e1tico para quienes no tenemos acceso (a\u00fan) a una c\u00e1mara de vac\u00edo.<\/p>\n<p>Terminamos la primera sesi\u00f3n con un <strong><em>Bloody Mary<\/em><\/strong> bastante <em>sui generis<\/em>, basado en experiencias de Nathan Mhyrvold y dos<\/h2>\n<p>El segundo d\u00eda nos dedicamos a la cocina sous vide y algunas de sus posibilidades. Tambi\u00e9n hablamos de texturizantes: Agar agar y un par de aplicaciones, <a href=\"https:\/\/www.le-fort.org\/caviar-de-alginato-y-calcio-por-supuesto\/\">caviar de alginato<\/a> y espuma de
