Esta vez, en la ciudad de Cuenca. Por diversas razones lo realizamos en nuestra aula y nuestra cocina. Quedamos un poco apretados, pero todo salio bien. Agradecemos a los asistentes por la adaptabilidad.<!--more--><\/p>\n<p>El primer d\u00eda hablamos mucho, sobre la novedad y la pseudonovedad en la cocina, la estrategia culinaria del Ecuador, incluyendo la <a href=\"https:\/\/www.le-fort.org\/guia-de-tecnicas-culinarias-ecuador\/\">Gu\u00eda de T\u00e9cnicas Culinarias<\/a>, el <a href=\"https:\/\/www.le-fort.org\/mapa-gastronomico-del-ecuador-publicado\/\">Mapa Gastron\u00f3mico del Ecuador<\/a> y otros proyectos importantes; un repaso de <a href=\"http:\/\/gastrofisica.org\/presion-y-ebullicion\/\" target=\"_blank\" rel=\"noopener noreferrer\">la presi\u00f3n, el vac\u00edo, y sus usos en cocina<\/a>; un repaso de coloides, hidrocoloides y otros productos de inter\u00e9s.<\/p>\n<p>Despu\u00e9s de almorzar, nos dedicamos a trabajar con el vac\u00edo, utilizando pickles r\u00e1pidos en vez del <em>Bloody Mary<\/em> de la vez anterior. No es que nos hayamos decantado por un curso sin alcohol, sino que el alcohol se lo asignamos a un <em>limoncello<\/em> casi instant\u00e1neo por cavitaci\u00f3n. Comenzamos con esferificaci\u00f3n con alginato de sodio: <a href=\"https:\/\/www.le-fort.org\/caviar-de-alginato-y-calcio-por-supuesto\/\">directa<\/a> e <a href=\"https:\/\/www.le-fort.org\/esferificacion-inversa\/\">inversa<\/a>. Hab\u00edamos dejado material listo para revisar tambi\u00e9n la esferificaci\u00f3n inversa con congelaci\u00f3n.
