{"id":1312,"date":"2013-11-15T16:24:10","date_gmt":"2013-11-15T19:24:10","guid":{"rendered":"http:\/\/www.sanguchologia.org\/?p=1312"},"modified":"2018-01-08T13:38:13","modified_gmt":"2018-01-08T18:38:13","slug":"choripan","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/choripan\/","title":{"rendered":"Chorip\u00e1n"},"content":{"rendered":"<p>El chorip\u00e1n es un s\u00e1nguche de origen argentino, y en su forma m\u00e1s simple consiste en un chorizo parrillero (es decir, blando) asado, dentro de un pan, con chimichurri.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1314\" src=\"https:\/\/i0.wp.com\/www.le-fort.org\/wp-content\/uploads\/2013\/11\/choripan.jpg?resize=700%2C400&#038;ssl=1\" alt=\"choripan\" width=\"700\" height=\"400\" \/><\/p>\n<p>Hay versiones m\u00e1s elaboradas que llevan tomate, lechuga, etc. Nosotros preparamos la versi\u00f3n m\u00e1s simple.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1315\" src=\"https:\/\/i0.wp.com\/www.le-fort.org\/wp-content\/uploads\/2013\/11\/chorizo-pan.jpg?resize=700%2C400&#038;ssl=1\" alt=\"chorizo-pan\" width=\"700\" height=\"400\" \/><\/p>\n<p>Comenzamos con el chorizo asado dentro del pan. Lo ideal es asarlo a la parrilla, pero si no se tiene parrilla, al horno anda muy bien. Las opciones principales son dos: asarlo entero o partirlo y asarlo. Si se asa entero se corre un riesgo de que quede crudo, mientras que si se parte se corre un riesgo de que quede seco.<\/p>\n<p>Pinchamos el chorizo para que suelte la grasa y el choripan quede (comparativamente) m\u00e1s liviano.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1316\" src=\"https:\/\/i0.wp.com\/www.le-fort.org\/wp-content\/uploads\/2013\/11\/con-chimichurri.jpg?resize=700%2C400&#038;ssl=1\" alt=\"con-chimichurri\" width=\"700\" height=\"400\" \/><\/p>\n<p>Luego viene el <strong>chimichurri<\/strong>, hecho con perejil, vinagre, aceite, un poquito de ajo y aj\u00ed. Hay tantas recetas de chimichurri como cocineros, probablemente. Los ingredientes que dimos no son exhaustivos.<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1317\" src=\"https:\/\/i0.wp.com\/www.le-fort.org\/wp-content\/uploads\/2013\/11\/con-mostaza.jpg?resize=700%2C400&#038;ssl=1\" alt=\"con-mostaza\" width=\"700\" height=\"400\" \/><\/p>\n<p>Finalmente, y saliendo de la ortodoxia minimalista, mostaza.<\/p>\n<p>Es un s\u00e1nguche que da para mucho, pudiendo recibir todas las variaciones que nos da el <a href=\"https:\/\/www.le-fort.org\/vienesa-palta-mayo\/\">hot-dog<\/a> y mucho m\u00e1s.
