Esta es una adaptaci\u00f3n de la receta. Tiene el gran m\u00e9rito de ser una aplicaci\u00f3n interesante de geles de almid\u00f3n deshidratados, adem\u00e1s de ser vistosa y de buen gusto.<!--more--><\/p>\n<p><strong>Actualizaci\u00f3n<\/strong>: Rodrigo repiti\u00f3 esta receta como tarea final del curso <a href=\"https:\/\/www.coursera.org\/learn\/ingenieria-gastronomica-ciencia-cocina\" target=\"_blank\" rel=\"noopener\">Ingenier\u00eda gastron\u00f3mica<\/a>, as\u00ed es que tenemos video.<\/p>\n<p>El procedimiento tiene 4 etapas interesantes desde un punto de vista t\u00e9cnico.<\/p>\n<ol>\n<li>Caldo de papas &#8211; extracci\u00f3n de sabor<\/li>\n<li>Gelatinizaci\u00f3n con almid\u00f3n de papas<\/li>\n<li>Deshidrataci\u00f3n del gel<\/li>\n<li>Fritura para formar un vidrio<\/li>\n<\/ol>\n<p>La l\u00f3gica consiste en preparar un caldo de papas para saborizar, luego gelificarlo con almid\u00f3n de papa, deshidratar y luego fre\u00edr muy brevemente en aceite a 130\u00b0C.
