Cuenta la historia que los guerreros mongoles pon\u00edan carne cruda envuelta bajo sus monturas. El movimiento y la fricci\u00f3n causados por el desplazamiento desmenuzaban la carne y el calor generado por la fricci\u00f3n la cocinaba un poco. Es quiz\u00e1 por esto que la carne picada o molida cruda se denomina <em>bistec t\u00e1rtaro<\/em>. No es infrecuente que en Europa se prepare con carne de caballo, lo que estar\u00eda m\u00e1s de acuerdo con lo que habr\u00edan hecho los mongoles.<\/p>\n<p>Por supuesto, toda historia tiene una contrahistoria y el bistec t\u00e1rtaro que nos habla de las lejanas estepas y nos dan ganas de releer el <em>Taras Bulba<\/em> se denominaba\u00a0<i>steack \u00e0 l&#8217;Americaine\u00a0<\/i>en tiempos de Escoffier, y se serv\u00eda con salsa t\u00e1rtara al lado. Es por ello que\u00a0 el puerto de Hamburgo en Alemania ten\u00eda una gran poblaci\u00f3n de inmigrantes rusos. No es de extra\u00f1ar que la carne picada, ya sin monturas, se convirtiera en un plato apreciado. En <a href=\"https:\/\/es.wikipedia.org\/wiki\/Art_of_Cookery\" target=\"_blank\" rel=\"noopener\">un libro<\/a> ingl\u00e9s de 1758 aparece un precursor llamado &#8220;salchicha de Hamburgo&#8221; preparada con carne molida y servida sobre un pan.<\/p>\n<h2>Rumbo a Am\u00e9rica del Norte<\/h2>\n<p>Durante el siglo XIX se invent\u00f3 la moledora de carne, por un lado, y por otro, hubo una gran migraci\u00f3n de alemanes a los Estados Unidos. De ah\u00ed que este &#8220;bistec de Hamburgo&#8221; se popularizara en los Estados Unidos, en parte porque era comida que se serv\u00eda en los barcos que iban de Hamburgo a Nueva York. A principios del siglo XX, sin que quede claro qui\u00e9n fue el (o los) inventoras\/es, la hamburguesa tom\u00f3 la forma que conocemos hoy, dentro de un pan, y se masific\u00f3 gracias a cadenas de comida r\u00e1pida como el McDonald\u2019s. Esta masificaci\u00f3n no hubiera sido posible si el mercado de la carne no se hubiera industrializado.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\"
