Imagen: pixabay<\/figcaption><\/figure>\n<p>Hoy d\u00eda, con <em>gourmet<\/em> nos referimos a un gastr\u00f3nomo o a un adjetivo que nos habla de calidad y refinamiento a la hora del comer y beber. Este significado nos acompa\u00f1a desde principios del siglo XIX (1820), pero no siempre fue as\u00ed.<\/p>\n<h3>Del vino a la comida<\/h3>\n<p>Antes de referirse a la comida, la palabra que nos ocupa se refer\u00eda a la bebida, m\u00e1s espec\u00edficamente al vino. En franc\u00e9s antiguo un <em>groumet<\/em> (notemos el cambio en la escritura) era un mercante de vinos, y antes de eso un criado a cargo de los vinos. A su vez, la palabra viene de <em>grommes<\/em>, que es una palabra germ\u00e1nica que quiere decir sirviente. Es decir, en poco menos de un milenio, pasamos de un sirviente a un gastr\u00f3nomo refinado. <em>In vino veritas<\/em>.<\/p>\n<p>Volviendo a nuestro idioma, la etimolog\u00eda es la misma que la de la palabra <em>grumete<\/em>.<\/p>\n<p>Durante el siglo XVIII tanto <em>gourmet<\/em> como <em>gourmand<\/em> eran t\u00e9rminos negativamente connotados. Persona de gustos exquisitos en lo relativo a la comida y a la bebida.<\/p>\n<p>2. adj. Propio de un gourmet. Comida, plato gourmet.<\/p><\/blockquote>\n<p>Hoy es tanto sustantivo como adjetivo, y lo vemos incorporado en el lenguaje diario, sobre todo en la venta de alimentos, como sin\u00f3nimo de <em>delikatessen<\/em>.
