En Ecuador, en la ciudad de Loja, tuvimos un taller <em>Arte y Ciencia de la Cocina Molecular I<\/em>, en el que trabajamos geles. curado<\/li>\n<\/ul>\n<\/li>\n<li>Fideos de gellan<\/li>\n<li>Otros usos, como la clarificaci\u00f3n de l\u00edquidos.<\/li>\n<\/ul>\n<p>Lo pasamos muy bien, nos re\u00edmos (como cuando nos
