{"id":14314,"date":"2019-08-10T20:22:56","date_gmt":"2019-08-11T01:22:56","guid":{"rendered":"https:\/\/www.le-fort.org\/?p=14314"},"modified":"2019-08-10T20:24:21","modified_gmt":"2019-08-11T01:24:21","slug":"sostenibilidad-en-santa-elena","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/sostenibilidad-en-santa-elena\/","title":{"rendered":"Sostenibilidad en Santa Elena"},"content":{"rendered":"<p>Impartimos el primer curso de Sustentabilidad para Profesionales Culinarios en Ecuador.<!--more--><\/p>\n<p>Es un tema que nos interesa desde hace a\u00f1os y para el que encontramos una excelente forma de expresi\u00f3n a trav\u00e9s del curso desarrollado por <em>Feed the Planet<\/em>, de Worldchefs en conjunto con Electrolux y AIESEC. Postulamos como instructores al curso y nos aceptaron. El curso est\u00e1 muy bien hecho y lo tradujimos al espa\u00f1ol y a la realidad ecuatoriana, con estad\u00edsticas, ejemplos y enfoques m\u00e1s propios del Ecuador que de los EE. UU., que es el destino original del curso. El proceso de investigar y de reescribir todo fue una excelente preparaci\u00f3n para dictar el curso.<\/p>\n<p>El impulso lo obtuvimos gracias al chef Patricio Iza, de la Asociaci\u00f3n de Chefs del Ecuador Santa Elena y la Escuela de Alta Cocina Arte Chef con quienes llevamos a\u00f1os trabajando. Nos impresion\u00f3 la amplitud del inter\u00e9s por el tema, con asistentes de varias provincias del Ecuador: Santa Elena, El Oro, Guayas, Loja, Azuay, Pichincha, Los R\u00edos y Carchi. El curso est\u00e1 dise\u00f1ado para una semana como materia de curr\u00edculo de estudios superiores en gastronom\u00eda, as\u00ed es que tuvimos que adaptarlo a un formato m\u00e1s reducido, de dos d\u00edas. Conseguimos exponer todos los temas, pero echamos de menos un poco m\u00e1s de tiempo para discutir y procesar lo expuesto. Hab\u00eda gente que sab\u00eda del tema, con quienes se dieron conversaciones y discusiones muy fruct\u00edferas, y tambi\u00e9n gente que ve\u00eda el tema por primera vez. Es fuerte enfrentarse a lo que hemos hecho como especie al ecosistema as\u00ed de sopet\u00f3n.<\/p>\n<h2>Primer curso de Sostenibilidad para Profesionales Culinarios en Ecuador: Temas.<\/h2>\n<p>\u00bfDe qu\u00e9 hablamos?<\/p>\n<p>El curso est\u00e1 dividido en siete grandes temas:<\/p>\n<ol>\n<li><strong>Visi\u00f3n General<\/strong>. Aqu\u00ed se ponen en el tapete los temas globales: sobrepoblaci\u00f3n, consumismo, calentamiento global, p\u00e9rdida y desperdicio de alimentos, desaf\u00edos de la cadena alimentaria, y algo sobre los cambios que vienen. Sostenibilidad no es lo mismo que sustentabilidad, y exploramos las diferencias.<\/li>\n<li><strong>Agricultura<\/strong>. No es f\u00e1cil alimentar a tanta gente. Exploramos c\u00f3mo lo consigue la agricultura industrializada, y vemos tambi\u00e9n qu\u00e9 costos humanos, sociales y ambientales hay que pagar por ello. Como alternativa se presenta la agricultura sostenible, que, si bien no es perfecta, vale la pena como alternativa.<\/li>\n<li><strong>Ganader\u00eda<\/strong>. En la ganader\u00eda sucede algo similar a lo que pasa con la agricultura, con los agravantes de sufrimiento animal, gases de invernadero, y composici\u00f3n nutricional de los alimentos. Ah, y vacas (y otras especies) locas. Se presenta la ganader\u00eda sostenible como alternativa, en conjunto con la reducci\u00f3n de consumo de prote\u00edna animal.<\/li>\n<li><strong>Acuacultura<\/strong>. Entre la pesca y la acuacultura hay mucho por hace en t\u00e9rminos de sostenibilidad. La sobrepesca, la alteraci\u00f3n de ecosistemas, la contaminaci\u00f3n y las enfermedades son temas por mejorar. Se presentan como alternativas la pesca y la acuacultura sostenibles. En este tema agradecemos a Biomar, que nos dio s\u00faper buena perspectiva sobre acuacultura sostenible.<\/li>\n<li><strong>Energ\u00eda<\/strong>. Pasamos de los alimentos a otros insumos necesarios en la industria del servicio de alimentos. La energ\u00eda es el primero de ellos, y en la visi\u00f3n general tratamos fuentes no renovables y fuentes renovables de energ\u00eda, consumo de energ\u00eda y qu\u00e9 hacer como profesionales culinarios para reducir nuestro consumo energ\u00e9tico en restaurantes y otros establecimientos.<\/li>\n<li><strong>Agua<\/strong>. Estamos complicados con el agua. El panorama es desalentador, y lo que podemos hacer desde nuestro \u00e1mbito de acci\u00f3n dom\u00e9stico es poco, pero no por ello menos importante.<\/li>\n<li><strong>Desechos<\/strong>. Hemos cocinado, hemos comido \u00bfy ahora qu\u00e9? Reducir, Reutilizar y Reciclar, importantes iniciativas para producir menos desechos. El uso de co-productos es una buena forma de reducir los desechos, y finalmente, el compostaje y reciclaje bien hechos son t\u00e9cnicas positivas.
