El confite de pato, el ajo confitado son entonces disonancias gustativas. No es as\u00ed.<!--more--><\/p>\n<p><strong>Confitar<\/strong> proviene del franc\u00e9s <em>confire<\/em>, que quiere decir conservar. Esta, a su vez, proviene del lat\u00edn, <em>conficere<\/em> (hacer, preparar). Originalmente, se refer\u00eda a la conservaci\u00f3n de frutas y flores en az\u00facar o alm\u00edbar. Tambi\u00e9n se utiliza como un m\u00e9todo de conservaci\u00f3n para carnes y vegetales que consiste en una cocci\u00f3n a baja temperatura en aceite de oliva o grasa de pato o ganso. Es por esto que coexisten los confites de dulce y los confites de salado.<\/p>\n<p>Aqui hablaremos del confite de ajo, que es una forma de conservarlo, y adem\u00e1s de generar sabores por <a href=\"https:\/\/www.le-fort.org\/las-reacciones-de-maillard-en-la-cocina\/\">reacciones de Maillard<\/a>. Nosotros los compramos ya pelados en el mercado, pero los puedes pelar en casa<\/li>\n<li>500ml aceite de oliva, o 250ml aceite de girasol o canola, y 250ml de aceite de oliva<\/li>\n<li>Hierbas a gusto. Nosotros utilizamos s\u00f3lo laurel (que es una hoja y no una hierba), pero or\u00e9gano, tomillo, romero u otros son excelentes opciones.<\/li>\n<li>Especias a gusto. Algunas ideas son:<\/p>\n<ul>\n<li>Pan de ajo: Formar una pasta con el ajo confitado y algo del aceite, y esparcir sobre rebanadas de pan.<\/li>\n<li>Sobre pasta<\/li>\n<li>Aderezo de ensaladas, ya sea solo o como parte de una vinagreta<\/li>\n<li>Utilizarlo para terminar una pizza<\/li>\n<li>Para vegetales asados, ya sea al horno o a la parrilla.<\/li>\n<li>Lo que el entendimiento nos dicte<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Receta de ajo confitado en aceite de oliva, utilizando una olla de presi\u00f3n para acelerar el proceso.
