Congreso de Innovaci\u00f3n Tecnol\u00f3gica en el Instituto de Tecnolog\u00edas Sudamericano en la ciudad de Cuenca. Esta idea no es nueva, sino que se puede encontrar en una serie de libros, como <a href=\"https:\/\/www.amazon.es\/Fermentaci%C3%B3n-Exploraci%C3%B3n-Profundidad-Conceptos-Fermentativos\/dp\/8484455645\" target=\"_blank\" rel=\"noopener noreferrer\"><em>El Arte de la fermentaci\u00f3n<\/em><\/a> de Sandor Katz, en los libros de Michael Pollan y en <em>Mouthfeel<\/em>, de Ole Mouritsen y Klavs Styrb\u00e6k. S\u00ed consideramos que es lo suficientemente interesante como para divulgarla.<\/p>\n<p>En el taller presentamos c\u00f3mo preparar pimiento y pepinillos encurtidos, y cebollas en escabeche a la chilena. Adem\u00e1s de los anteriores, dimos para degustaci\u00f3n <em>Labneh<\/em> y limones curados en sal. Ganaron los limones.<\/p>\n<p>En la ponencia revisamos brevemente diversas t\u00e9cnicas, con \u00e9nfasis en t\u00e9cnicas propias de nuestra Am\u00e9rica prehisp\u00e1nica, como la liofilizaci\u00f3n (tunta), el secado (charqui) y la fermentaci\u00f3n (chicha, tocosh). Es interesante la poca noci\u00f3n que tenemos de nuestras propias tradicines de conservaci\u00f3n.
