{"id":158,"date":"2020-05-05T13:15:16","date_gmt":"2020-05-05T18:15:16","guid":{"rendered":"https:\/\/pastry.science\/?p=158"},"modified":"2021-12-27T21:15:19","modified_gmt":"2021-12-28T02:15:19","slug":"crepes","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/crepes\/","title":{"rendered":"Cr\u00eapes"},"content":{"rendered":"<p>Receta de cr\u00eapes adaptada desde\u00a0<i>Baking and pastry: mastering the art and craft.\u00a0<\/i>P\u00e1gina 241.<\/p>\n<p>Rendimiento: 45 a 50 cr\u00eapes.<\/p>\n<p><a href=\"https:\/\/www.loquecomemos.com\/receta\/crepes\/\" target=\"_blank\" rel=\"noopener noreferrer\">Aqu\u00ed hay una receta alternativa<\/a>.<!--more--><\/p>\n<h2>Ingredientes<\/h2>\n<ul>\n<li>680g leche entera<\/li>\n<li>340g crema de leche<\/li>\n<li>510g huevos (aprox. 10)<\/li>\n<li>30g aceite vegetal<\/li>\n<li>40g az\u00facar<\/li>\n<li>1 pizca de sal<\/li>\n<li>510g harina<\/li>\n<li>c.s. mantequilla, para cocinar, c.s.<\/li>\n<li>c.s. saborizante, opcional<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Unir la leche, crema, huevos, aceite, az\u00facar y sal en un bol. A\u00f1adir el saborizante, si se utiliza, y la harina, batiendo con batidor de alambre hasta incorporar.<\/li>\n<li>Cernir el batido por un cernidor fino. Dejar descansar en refrigeraci\u00f3n al menos 30 minutos e idealmente de un d\u00eda para otro.<\/li>\n<li>Fundir una peque\u00f1a cantidad de mantequilla en una sart\u00e9n para cr\u00eapes o en su defecto, una sart\u00e9n antiadherente.<\/li>\n<li>A\u00f1adir la cantidad justa con un cuchar\u00f3n para cubrir la superficie de la sart\u00e9n.
