{"id":15996,"date":"2020-12-01T19:03:19","date_gmt":"2020-12-02T00:03:19","guid":{"rendered":"https:\/\/comer.me\/?p=227"},"modified":"2020-12-01T19:03:19","modified_gmt":"2020-12-02T00:03:19","slug":"pollo-crocante-a-la-mandarina","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/pollo-crocante-a-la-mandarina\/","title":{"rendered":"Pollo Crocante a la Mandarina"},"content":{"rendered":"<p>Receta de estilo oriental que incluye una serie de las t\u00e9cnicas que estamos aprendiendo.<\/p>\n<p><!--more--><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-239\" src=\"https:\/\/i0.wp.com\/le-fort.org\/wp-content\/uploads\/2020\/12\/pollo-2.jpg?resize=1200%2C675&#038;ssl=1\" alt=\"Pollo crocante\" width=\"1200\" height=\"675\" \/><\/p>\n<p>Rendimiento: 2 pax.<\/p>\n<h2>Ingredientes<\/h2>\n<p>Para la marinada<\/p>\n<ul>\n<li>30mL salsa de soya<\/li>\n<li>5g ajo picado<\/li>\n<li>3g sal<\/li>\n<li>4g pimienta blanca molida<\/li>\n<\/ul>\n<p>Pollo<\/p>\n<ul>\n<li>180g pechuga de pollo cortada en cubos de 3cm<\/li>\n<li>1L aceite de girasol o canola, para fre\u00edr.<\/li>\n<\/ul>\n<p>Cobertura del pollo<\/p>\n<ul>\n<li>1 huevo, batido<\/li>\n<li>120mL agua<\/li>\n<li>170g maicena<\/li>\n<\/ul>\n<p>Vegetales<\/p>\n<ul>\n<li>15mL aceite de canola o girasol<\/li>\n<li>5g ajo picado<\/li>\n<li>5g jengibre picado<\/li>\n<li>15g cebolla verde en juliana<\/li>\n<li>15g c\u00e1scara de mandarina picada en <em>brunoise<\/em> fino<\/li>\n<li>45g champi\u00f1ones<\/li>\n<li>45g pimiento rojo cortado en cuadrados de 3cm<\/li>\n<li>45g floretes de br\u00f3coli, blanqueados (los podemos blanquear en clase)<\/li>\n<\/ul>\n<p>Salsa<\/p>\n<ul>\n<li>15mL aceite de canola o girasol<\/li>\n<li>5g ajo picado<\/li>\n<li>5g jengibre picado<\/li>\n<li>10g cebolla larga picada<\/li>\n<li>60ml salsa de soya<\/li>\n<li>30ml vinagre<\/li>\n<li>60g az\u00facar<\/li>\n<li>100mL agua<\/li>\n<li>15 g maicena dispersa en 50ml agua<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Mezclar los ingredientes de la marinada, cubrir el pollo y dejar reposar 20 minutos en refrigeraci\u00f3n<\/li>\n<li>Preparar la salsa<\/li>\n<li>Calentar el aceite para fre\u00edr a 175\u00b0C en una olla adecuada<\/li>\n<li>Mezclar los ingredientes de la cobertura del pollo, batiendo hasta incorporar bien<\/li>\n<li>Drenar el pollo y mezclarlo con la cobertura<\/li>\n<li>Fre\u00edr el pollo hasta que est\u00e9 cocinado, crujiente y dorado: 2 a 3 minutos. Drenar sobre papel y mantener caliente<\/li>\n<li>Calentar el aceite para los vegetales. Fre\u00edr el ajo, el jengibre, la c\u00e1scara de mandarina y la cebolla 15 a 30 segundos<\/li>\n<li>A\u00f1adir los champi\u00f1ones y saltear 2 minutos. A\u00f1adir el pimiento y saltear 2 minutos.
