de Cerdo"},"content":{"rendered":"<p>Rollo de cerdo con relleno agridulce<\/p>\n<h2 class=\"title-section\">Ingredientes<\/h2>\n<h4>Relleno<\/h4>\n<ul>\n<li>50ml vinagre destilado<\/li>\n<li>50ml jugo de manzana<\/li>\n<li>15g panela molida<\/li>\n<li>1 cebolla paite\u00f1a peque\u00f1a, picada en brunoise<\/li>\n<li>1 manzana granny Smith, pelada, sin coraz\u00f3n y picada en dado medio<\/li>\n<li>20g pasas<\/li>\n<li>1cdta jengibre rallado<\/li>\n<li>1\/4cdta canela en polvo<\/li>\n<li>1cda apanadura<\/li>\n<\/ul>\n<p><strong>Chancho<\/strong><\/p>\n<ul>\n<li>200g lomo de cerdo cortado para cecina<\/li>\n<li>c\/n Sal y pimienta<\/li>\n<\/ul>\n<p><strong>Salsa de mostaza y miel<\/strong><\/p>\n<ul>\n<li>30g miel de abeja<\/li>\n<li>15g condimento de mostaza<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Cocinar la cebolla en el vinagre, manzana y panela hasta que est\u00e9 transparente<\/li>\n<li>A\u00f1adir la manzana, pasas, jengibre y canela y cocinar hasta que la manzana est\u00e9 blanda<\/li>\n<li>Retirar del calor, dejar enfriar 5 minutos e incorporar la apanadura<\/li>\n<li>Preparar la salsa de mostaza y miel batiendo la mostaza y la miel y dejando reposar 5 minutos<\/li>\n<li>Formar, cocinar y dorar la roulade <a href=\"https:\/\/le-fort.org\/2020\/roulade\/\">de la misma forma que la de pollo<\/a>.<\/li>\n<li>Emplatar salseando con la mostaza miel<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Rollo de chancho
