Coca, en conjunto con <a href=\"https:\/\/www.facebook.com\/people\/Coca-Chefs\/100010485484410\/\">Coca Chefs<\/a> a trav\u00e9s de la <a href=\"https:\/\/chefs.ec\">Asociaci\u00f3n de Chefs del Ecuador<\/a>.<\/p>\n<p><!--more--><\/p>\n<p>Nuestra intenci\u00f3n con estos cursos es desmitificar y deselitizar la cocina molecular, que tiene injusta fama de dif\u00edcil y sobreprecios impresionantes en sus productos.<\/p>\n<p>Ah, y lo m\u00e1s importante, dejar claro que<strong> gastronom\u00eda molecular y cocina molecular son dos cosas muy distintas<\/strong>.<\/p>\n<p><img Loor<\/li>\n<\/ul>\n<h2>Programa de Cocina Molecular en la Amazon\u00eda<\/h2>\n<p>Realizamos un men\u00fa muy simple para mostrar las distintas aplicaciones y t\u00e9cnicas de cocina molecular de forma introductoria, pero antes dejamos tiempo para conversar sobre lo molecular, los elementos sensoriales de que dispone un cocinero como su paleta de trabajo, con gui\u00f1os a Richard Spence y Dan Jurafsky, la cocina de autor vista desde la taxonom\u00eda de Bloom (no somos dignos); y finalmente nos pusimos a cocinar. \u00bfQu\u00e9 preparamos?<\/p>\n<ul>\n<li><em>Limoncello<\/em> con espuma de guayusa: <a href=\"https:\/\/le-fort.org\/infusion-rapida-por-cavitacion\/\">infusi\u00f3n r\u00e1pida<\/a> y espumas, ambas de sif\u00f3n.<\/li>\n<li><a href=\"https:\/\/le-fort.org\/gazpacho\">Gazpacho<\/a> clarificado con aire de vinagre (vinaire?)<\/li>\n<li><em>Roulade<\/em> de pechuga <em>sous vide<\/em>. Muy simple pero aprovechamos de mostrar las bondades de la transglutaminasa.
