Es una especie de <a href=\"https:\/\/le-fort.org\/rachel-sandwich-pastrami-cole-slaw-y-queso\/\"><em>cole slaw<\/em><\/a> picante. Delicioso. Digno condimento para <a href=\"https:\/\/www.patrimoniocultural.gob.ec\/la-cocina-tradicional-manabita-recibe-la-certificacion-de-patrimonio-cultural-inmaterial-del-ecuador\/\" target=\"_blank\" rel=\"noopener\">esta cocina que es patrimonio del Ecuador<\/a>.<\/p>\n<p><!--more--><\/p>\n<p>Es una de esas recetas sin receta, ya que tiene lo que cada quien decida. Esta receta adapta lo que hemos probado en establecimientos manabas, sobre todo de Portoviejo.<\/p>\n<h2>Ingredientes del Aj\u00ed Manaba<\/h2>\n<ul>\n<li>100 g de aj\u00ed, preferentemente aj\u00ed rat\u00f3n, aunque hay recetas con aj\u00ed rocoto o coste\u00f1o.<\/li>\n<li>100 g de zanahoria rallada o picada en juliana<\/li>\n<li>100 de repollo (col) picada en juliana<\/li>\n<li>100 g de cebolla morada (paite\u00f1a) en dados peque\u00f1os<\/li>\n<li>50 g de cilantro picado finamente<\/li>\n<li>50 ml de vinagre de guineo (pl\u00e1tano). Si no est\u00e1 disponible, se puede sustituir por vinagre destilado o al gusto<\/li>\n<li>50 ml de aceite neutro<\/li>\n<li>Sal a gusto, una cucharadita es un buen comienzo<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Mezclar todos los ingredientes<\/li>\n<li>Dejar reposar para que se integren los sabores<\/li>\n<\/ol>\n<p>Este aj\u00ed tiene buena duraci\u00f3n. En el fondo es un encurtido, por lo que el \u00e1cido lo protege.
