Esta vez nos enfrentamos al <strong>Dabeli<\/strong>, un sandwich originario de India, donde es muy popular en la gastronom\u00eda callejera (le\u00edmos: nunca hemos andado por all\u00e1).<!--more--><\/p>\n<p class=\"destacado\">Este sandwich es parte de nuestro curso <a href=\"https:\/\/le-fort.org\/cursos\/sanduches-del-mundo\/\" title=\"Curso de s\u00e1nduches en Ecuador\">S\u00e1nduches del Mundo<\/a>, que dictamos en Ecuador.<\/p>\n<p>Hace poco convers\u00e1bamos con\u00a0nuestro amigo Miguel \u00c1ngel sobre lo insatisfactorio que es ir a sangucher\u00edas siendo vegetariano, ya que la tradici\u00f3n sanguchera chilena est\u00e1 construida en torno a tajadas de animal. \u00a0Con esa conversa recordamos haber visto este Dabeli hace poco y decidimos probarlo, por supuesto haciendo una serie de adaptaciones a ingredientes que no tenemos.<\/p>\n<p>Es un s\u00e1nguche interesante.<\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" mezcla de especias (semilla de cilantro, comino, aj\u00ed, canela) y molerla hasta obtener un polvo<\/li>\n<li>Saltear semillas de comino en una sart\u00e9n, a\u00f1adir las especias y las papas. \u00a0A\u00f1adir el jugo de un lim\u00f3n (o tamarindo), un poco de agua y cocinar hasta obtener una pasta firme.<\/li>\n<li>Armar los s\u00e1nguches en pan de hamburguesa, con <em>chutneys<\/em> \/><\/li>\n<\/ul>\n<p>Imaginamos que debido a que el relleno de papas tiene poca consistencia, el s\u00e1nguche tiene una serie de elementos crocantes: cebolla cruda, man\u00ed en pedacitos y unas masitas de harina de garbanzo llamadas <em>sev<\/em>. Con un poco m\u00e1s de planificaci\u00f3n las pod\u00edamos reemplazar por papas hilo crujientes o papas fritas de bolsa. Tambi\u00e9n con un poco m\u00e1s de planificaci\u00f3n se podr\u00eda disponer de m\u00e1s <em>chutneys<\/em>. S\u00f3lo hicimos un<a href=\"https:\/\/le-fort.org\/chutney-de-cilantro-coco\/\" target=\"_blank\" rel=\"noopener\"> chutney r\u00e1pido de cilantro<\/a>.<\/p>\n<p>Es una buena primera aproximaci\u00f3n al Dabeli.
