{"id":2276,"date":"2012-11-27T09:06:14","date_gmt":"2012-11-27T13:06:14","guid":{"rendered":"http:\/\/www.duarte.cl\/?p=2276"},"modified":"2017-12-16T11:00:12","modified_gmt":"2017-12-16T16:00:12","slug":"receta-pan-de-pascua","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/receta-pan-de-pascua\/","title":{"rendered":"Pan de Pascua &#8211; Fruitcake"},"content":{"rendered":"<p>Hay una serie de razones clim\u00e1ticas, nutricionales y culturales que hablan en contra de hacer <a href=\"https:\/\/www.le-fort.org\/pan-de-pascua-ii\/\">Pan de Pascua<\/a> (m\u00e1s a\u00fan <em>fruitcake<\/em>), pero se diluyen r\u00e1pidamente en presencia de la gula, el m\u00e1s noble de los pecados capitales.<\/p>\n<p><!--more--><\/p>\n<p>Este es un excelente momento del a\u00f1o para renovar el <em>stock<\/em> de especias. No es lo mismo una canela toda desvanecida que una poderosa canela fresquita, por ejemplo.<\/p>\n<p>Esta receta no usa fruta confitada cuya especie no se pueda distinguir a simple vista. No a la c\u00e1scara de sand\u00eda confitada y coloreada artificialmente.<\/p>\n<p>Este <strong>pan de pascua<\/strong>\u00a0est\u00e1 basado en los fruitcake anglos y ha tenido alg\u00fan \u00e9xito. Se prepara as\u00ed:<\/p>\n<h2>Ingredientes<\/h2>\n<ul>\n<li>2 tazas de Pasas, sin pepas ni palitos<\/li>\n<li>2 tazas de Almendras, peladas si le da la diligencia<\/li>\n<li>1 taza de Pi\u00f1a confitada picada<\/li>\n<li>2 tazas de Higos secos picados<\/li>\n<li>2 tazas de Damascos secos picados<\/li>\n<li>1 taza de Ciruelas secas picadas<\/li>\n<li>1 botella de Ron<\/li>\n<li>1 taza de Az\u00facar morena<\/li>\n<li>Especias (nuez moscada, canela y clavo) a gusto generoso. pensar en un par de cucharadas de t\u00e9 de cada una.<\/li>\n<li>2 kilos de harina con polvos<\/li>\n<li>6 huevos<\/li>\n<li>250 grs. mantequilla<\/li>\n<\/ul>\n<h2>Preparaci\u00f3n<\/h2>\n<ol>\n<li>Se pica todo lo que hay que picar y se deja remojar en la botella de ron, idealmente al menos una semana, pero en un apuro puede ser menos.<\/li>\n<li>Se baten los huevos con el az\u00facar<\/li>\n<li>Se cierne la harina de a poco integr\u00e1ndola bien.<\/li>\n<li>Se a\u00f1aden las especias molidas y se mezcla bien nuevamente.<\/li>\n<li>Se a\u00f1aden las frutas remojadas.<\/li>\n<li>Se vierte el batido en moldes enmantequillados, idealmente forrados por dentro con papel mantequilla enmantequillado y se lleva a horno medio hasta que un palito insertado en el pan salga seco (1:30 hrs. aprox.)<br \/>\nSi se est\u00e1 tostando mucho por arriba tapar con papel de aluminio.<\/li>\n<li>Opcionalmente se puede dejar emborrachando en ron bien cerrado con alusa plas o similar por hasta un mes.
