{"id":251,"date":"2020-12-15T21:00:05","date_gmt":"2020-12-16T02:00:05","guid":{"rendered":"https:\/\/comer.me\/?p=251"},"modified":"2020-12-15T21:00:05","modified_gmt":"2020-12-16T02:00:05","slug":"roulade","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/roulade\/","title":{"rendered":"Roulade de Pollo Rellena de Vegetales"},"content":{"rendered":"<p>Simple y elegante<\/p>\n<p><!--more--><\/p>\n<h2>Ingredientes<\/h2>\n<p>Pollo<\/p>\n<ul>\n<li>1 cucharada de aceite de oliva<\/li>\n<li>1 diente de ajo, finamente picado<\/li>\n<li>50g zanahoria en juliana<\/li>\n<li>50g <em>zucchini<\/em> en juliana<\/li>\n<li>50g pimiento rojo en juliana<\/li>\n<li>1\/2 cdta de sal<\/li>\n<li>1 cucharada de apanadura<\/li>\n<li>1\/2 pechuga de pollo, limpia<\/li>\n<li>1 cucharada de aceite de oliva o mantequilla<\/li>\n<\/ul>\n<p>Salsa<\/p>\n<ul>\n<li>60ml vinagre bals\u00e1mico<\/li>\n<li>1cdta miel de abeja<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Saltear el ajo en el aceite 30 segundos<\/li>\n<li>A\u00f1adir los vegetales en juliana. Saltear 3 minutos<\/li>\n<li>A\u00f1adir la sal. Incorporar, y dejar en un bowl fuera del fuego enfriar 3 minutos. Incorporar la apanadura<\/li>\n<li>Abrir la pechuga en mariposa (sin separar ambas mitades). Poner entre dos l\u00e1minas de film pl\u00e1stico y golpear hasta un grosor de 6mm. Darle forma rectangular.<\/li>\n<li>Disponer el relleno sobre la mitad del pollo, dejando un borde de 2cm. por lado. Doblar el pollo sobre el relleno<\/li>\n<li>Enrollar en film pl\u00e1stico, d\u00e1ndole tensi\u00f3n al enrollar y amarrar los extremos.<\/li>\n<li>Volver a enrollar repitiendo el paso anterior<\/li>\n<li>Llevar a <em>simmer<\/em> (cocci\u00f3n lenta a 90\u00b0C) por 15 minutos. Retirar del agua y dejar reposar 10 minutos.<\/li>\n<li>Desenrollar el film pl\u00e1stico y dorar por todos lados<\/li>\n<li>Cortar en rodajas y servir con la reducci\u00f3n de bals\u00e1mico miel.<\/li>\n<\/ol>\n<h3>Reducci\u00f3n de bals\u00e1mico miel<\/h3>\n<ol>\n<li>Mezclar vinagre y miel y reducir hasta que est\u00e9 viscosa.<\/li>\n<\/ol>\n<h2>Referencias<\/h2>\n<h3>Corte juliana<\/h3>\n<p><span class=\"embed-youtube\" style=\"text-align:center;
