Dado el \u00e9nfasis de este sitio, procedo a destacar lo mejor del a\u00f1o en la cocina. Veamos cu\u00e1les fueron las epifan\u00edas grandes del a\u00f1o.<!--more--><\/p>\n<h2>Rollos de Canela<\/h2>\n<p>Los rollitos de canela fueron un <em>aaaaaaah<\/em> en nuestra cocina este a\u00f1o. Tan simples de preparar y tan buenos. Tememos hacernos adictos.<\/p>\n Rollitos de Canela\n<h2>Comida China<\/h2>\n<p>Excelente forma de comer verduras (casi) sin darse cuenta, la comida china de la Macadamia fue uno de los platos recurrentes y populares del 2012. De aqu\u00ed al restaurant chino hay\u2026 nada. No pondremos restaurante alguno \ud83d\ude09<\/p>\n Comida China de la Macadamia\u2122 Con decir que hasta se le perdonan los porotos verdes\n<h2>\u00d1oquis Dorados<\/h2>\n<p>Los \u00f1oquis dorados en vez de hervidos constituyeron un Rubic\u00f3n en nuestros d\u00edas 29.<\/p>\n Los \u00f1oquis dorados son otra cosa.\n<h2>El Pan<\/h2>\n<p>No es nuevo que hagamos pan en casa. Lo nuevo es tener el tiempo, la calma y el horno el\u00e9ctrico. En este a\u00f1o creativo hemos investigado mucho en panes. Es m\u00e1s. Ha sido un a\u00f1o bajo la \u00e9gida del carbohidrato.<\/p>\n Un t\u00edpico pan dominguero\n<h2>La investigaci\u00f3n en queques<\/h2>\n<p>Siguiendo con el carbohidrato, los queques, de la mano de la dulc\u00edsima gula de la Macadamia\u2122 fueron protagonistas.<\/p>\n Brownies, lo que siempre viene bien\n Queque de pl\u00e1tano y coco\n<h2>Los s\u00e1nduches caseros<\/h2>\n<p>Aqu\u00ed en Ecuador el t\u00e9rmino es S\u00e1nduche en vez de S\u00e1nguche. Hemos trabajado harto al respecto. Se pueden ver los avances en <a title=\"Sitio de S\u00e1nguches. Es m\u00e1s, es La Enciclopedia del Sandwich\" href=\"http:\/\/www.le-fort.org\">le-fort.org<\/a>.<\/p>\n S\u00e1nduches varios este a\u00f1o\n<h2>El Pescado Local<\/h2>\n<p>No es novedad para nadie que Ecuador tiene mucha costa y excelente pescado y marisco, distinto al de Chile. Con el at\u00fan fresco a dos lucas el kilo (s\u00ed, CLP 2.000) ha sido un a\u00f1o de ceviches y Amritsari Fish.<\/p>\n Ceviche de camar\u00f3n\n El &#8220;otro&#8221; pescado frito\n<h2>Las Salsas para Pastas<\/h2>\n<p>Cero novedad. Somos los tontitos de la pasta. En este a\u00f1o de tranquilidad, creatividad y experimentaci\u00f3n hicimos cosas de inter\u00e9s con\u00a0las pastas y sus salsas.<\/p>\n Salsa Alfredo (casi) can\u00f3nica\n<p>Esos son los puntos que vienen m\u00e1s r\u00e1pido a la mente en un a\u00f1o de muy, muy buen comer. Adem\u00e1s hicimos una serie de otras cosas:<\/p>\n<ul>\n<li>Pad Thai<\/li>\n<li>Naranjitas<\/li>\n<li>Tarte Tatin<\/li>\n<li>Cosas chocolatosas con ganache y otras cochinadas<\/li>\n<li>Maravillas con la mantequilla de man\u00ed<\/li>\n<li>Salsa Sriracha<\/li>\n<\/ul>\n<p>En fin\u2026 hay tanto, pero tanto que comer el 2013.
