Este es un resumen.<\/p>\n<p>El libro se divide en 4 cap\u00edtulos:<!--more--><\/p>\n<h3>Fuego: los asados<\/h3>\n<p>Explora las transformaciones del fuego \u00a0el calor sobre la carne utilizando el BBQ de cerdo del estado de Carolina como ejemplo.<\/p>\n<h3>Agua: los guisos<\/h3>\n<p>El guiso es en agua, explora las similitudes y diferencias entre los distintos tipos de guisos, la importancia del sofrito y las diferencias sociales y de ingredientes entre el asado y el sofrito.<\/p>\n<h3>Aire: el pan<\/h3>\n<p><span style=\"line-height: 1.714285714; font-size: 1rem;\">El pan supone la acci\u00f3n de levaduras que digieren los carbohidratos complejos de la harina y los convierten en otros compuestos, entre ellos el CO2 que hace que el pan suba. \u00a0<\/span><\/p>\n<h3>Tierra: la fermentaci\u00f3n<\/h3>\n<p>Pickles, Yoghurt, cerveza, queso\u2026 los alimentos fermentados son putrefacciones controladas que nos proveen de bacterias beneficiosas, entre otros nutrientes.
