{"id":558,"date":"2012-12-13T16:43:55","date_gmt":"2012-12-13T19:43:55","guid":{"rendered":"http:\/\/www.sanguchologia.org\/?p=558"},"modified":"2018-01-05T08:30:49","modified_gmt":"2018-01-05T13:30:49","slug":"haciendo-pan-para-sanguches-en-casa","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/haciendo-pan-para-sanguches-en-casa\/","title":{"rendered":"Haciendo Pan para S\u00e1nguches en Casa"},"content":{"rendered":"<p>Debido a la flojera que nos da salir, nos hemos especializado en preparar s\u00e1nguches en casa, y f\u00edjense que es una actividad muy placentera, jejejeje.<\/p>\n<p>El pan nos ha tomado un poco de tiempo en su entendimiento y perfeccionamiento, y a continuaci\u00f3n les contamos nuestras conclusiones al respecto:<!--more--><\/p>\n<p>Actualizaci\u00f3n, cinco a\u00f1os despu\u00e9s: <a href=\"https:\/\/www.le-fort.org\/haz-pan-de-sanguche-en-tu-casa\/\">Hemos seguido aprendiendo y las cosas han avanzado desde aqu\u00ed<\/a>.<\/p>\n<ol>\n<li><span style=\"line-height: 14px;\"><strong>Definitivamente de levadura<\/strong>. El pan de polvos de hornear es r\u00e1pido y satisfactorio para un desayuno, pero por el hecho de tener poco amasado le falta esa estructura y esa elasticidad propia del pan con levadura.<\/span><\/li>\n<li><strong>El tiempo de leudado es parte del dise\u00f1o<\/strong>. Para s\u00e1nguches de poco ingrediente, o de ingrediente seco, poco tiempo de leudado para que no se infle mucho. Para s\u00e1nguches que requieren gran capacidad de absorci\u00f3n de salsas, jugos y similares, m\u00e1s tiempo de leudado.<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-562\" src=\"https:\/\/i0.wp.com\/www.le-fort.org\/wp-content\/uploads\/2012\/12\/2012-10-07_23-04-34_803.jpg?resize=640%2C480&#038;ssl=1\" alt=\"Un pan poderoso\" width=\"640\" height=\"480\" \/><\/li>\n<li><strong>El horno bien caliente<\/strong>. Aqu\u00ed nos gustan los panes de corteza dura y crujiente. Los hemos obtenido horneando el pan en horno caliente. A temperaturas menores la corteza no cruje, y la preferimos crujiente. Por supuesto, tambi\u00e9n es parte de un dise\u00f1o.<\/li>\n<li><strong>Fre\u00edr el pan en la sart\u00e9n<\/strong>. Es una buen\u00edsima cosa fre\u00edr los lados interiores del pan en la sart\u00e9n en que preparamos el relleno del s\u00e1nguche.
