Las empanadas fueron hechas en Ecuador, para que veas como viajan las recetas.<\/p>\n<p>Manos a la obra.<\/p>\n<h2>Preparaci\u00f3n de las Empanadas<\/h2>\n<p>La preparaci\u00f3n de las empanadas tiene dos partes: la masa y el relleno (pino).<\/p>\n<p>El pino conviene prepararlo el d\u00eda anterior, mientras que la masa funciona mejor el mismo d\u00eda.<\/p>\n<h3>Preparaci\u00f3n del pino (relleno)<\/h3>\n<p>Para el pino necesitamos los siguientes ingredientes:<\/p>\n<ul>\n<li>500 grs. de posta negra (nalga , pulpa prieta), picada en cubitos peque\u00f1os. Tambi\u00e9n se puede utilizar carne molida.<\/li>\n<li>2 dientes de ajo picados finamente<\/li>\n<li>3 cebollas grandes picadas en cuadritos peque\u00f1os<\/li>\n<li>2 ramitas de perejil<\/li>\n<li>2 ramitas de or\u00e9gano fresco<\/li>\n<li>1 cucharada sopera de aj\u00ed de color (se puede reemplazar por paprika h\u00fangara si no hay aj\u00ed de color)<\/li>\n<li>1 cucharadita de comino en polvo<\/li>\n<li>1\/2 cucharadita de pimienta negra molida<\/li>\n<li>1 taza de vino blanco<\/li>\n<li>1 cucharada sopera colmada de maicena<\/li>\n<li>1 cucharada sopera colmada de harina<\/li>\n<\/ul>\n<p>Dejamos que la carne repose con el ajo y un poco de comino una hora al menos.<\/p>\n<p>Doramos la cebolla en una sart\u00e9n grande<em> sin aceite<\/em>. Cuando est\u00e1 transparente, a\u00f1adimos el aj\u00ed de color, la carne y un poquito de aceite, y doramos la carne. A\u00f1adimos perejil y or\u00e9gano (los retiraremos m\u00e1s tarde).<\/p>\n<p>A\u00f1adimos el vino blanco y dejamos que hierva el alcohol. Luego a\u00f1adimos la harina y la maicena disueltas en un poco de agua y cocinamos hasta que espese. Cortamos el fuego, corregimos la sal, y a\u00f1adimos un poco m\u00e1s de comino a gusto.<\/p>\n<p>Dejamos que el pino repose\u00a0toda la noche.<\/p>\n<p>Al d\u00eda siguiente&#8230;<\/p>\n<h3>Preparaci\u00f3n de la masa<\/h3>\n<p>Para la masa necesitamos:<\/p>\n<ul>\n<li>500 grs. de harina sin polvos de hornear<\/li>\n<li>500 grs. de harina con polvos de hornear<\/li>\n<li>125 grs. de manteca de cerdo<\/li>\n<li>2 huevos<\/li>\n<li>1 cucharada sopera de sal<\/li>\n<li>1 vaso de vino blanco<\/li>\n<li>jugo de medio lim\u00f3n<\/li>\n<li>Leche seg\u00fan sea necesario<\/li>\n<\/ul>\n<p>En un bol grande echemos la harina (ambos tipos) y mezcl\u00e9mosla con la manteca usando los dedos, hasta que queden grumos, como una arena gruesa.<\/p>\n<p>Aparte, mezclamos los otros ingredientes (menos la leche). Vertemos los ingredientes l\u00edquidos sobre la harina con manteca y mezclamos. Luego comenzamos a amasar, agregando leche de a poco s\u00f3lo si la masa est\u00e1 muy dura. Una vez uslereada\/laminada, cortemos discos de unos 20 cm. de di\u00e1metro. Lo que a nosotros nos es m\u00e1s c\u00f3modo es utilizar un plato.<\/p>\n<p>Luego, podemos armar las empanadas.<\/p>\n<h3>Armado de las empanadas<\/h3>\n<p>Sobre un disco de masa pongamos dos cucharadas soperas de relleno, un cuarto de huevo duro, una aceituna y 4 pasas. Las pasas son objeto de discusi\u00f3n. Doblar hacia arriba. Luego repetir el procedimiento desde los lados.
