Tiene que estar muy fresco.<\/p>\n<h2>\u00bfC\u00f3mo sabemos si el camar\u00f3n est\u00e1 fresco?<\/h2>\n<p>Lo primero es el olor. El camar\u00f3n debe oler bien, a mar. Nunca compremos camarones que huelan extra\u00f1o.<\/p>\n<p>De ser posible, es indispensable\u00a0comprarlo con caparaz\u00f3n y con cabeza (ya veremos por qu\u00e9). Un camar\u00f3n fresco tiene una l\u00ednea negra entre la cabeza y el t\u00f3rax.<\/p>\n<p>En caso de que el camar\u00f3n no tenga cabeza, la carne debe verse turgente, pero no trasl\u00facida. Una vez que el agua hierva, a\u00f1adimos los camarones con el caparaz\u00f3n (perd\u00f3n por la insistencia) y esperamos a que el agua vuelva a hervir. Inmediatamente los camarones cambian de color a rojo. Abrimos el camar\u00f3n ya pelado con los pulgares, y retiramos el hilo intestinal directamente.
