Lo importante es que quede un pur\u00e9 compacto, sin demasiada harina, que no son \u00f1oquis, pero que no se desarme al fre\u00edr.<\/p>\n<p>Una pasada por huevo batido y posterior enharinado antes de fre\u00edr hacen maravillas para la apariencia y costrita crujiente de una papa rellena superlativa.<\/p>\n<h2>Receta de papas rellenas con queso<\/h2>\n<p>El libro <strong>Cocina Popular<\/strong>, de Mariana Walker es una joyita, de diagramaci\u00f3n humilde y contenido poderoso. A \u00e9l nos remitimos para obtener la receta y no defraud\u00f3. Esta es una leve adaptaci\u00f3n que rinde seis papas rellenas m\u00e1s bien grandes.<\/p>\n<ul>\n<li>1 kg papas<\/li>\n<li>4 huevos<\/li>\n<li>2 cucharadas soperas de harina<\/li>\n<li>250 grs. de queso mantecoso (o <a href=\"https:\/\/www.le-fort.org\/empanadas-de-pino-tipicas-empanadas-chilenas\/\">pino<\/a>)<\/li>\n<li>sal, merk\u00e9n (este \u00faltimo totalmente opcional)<\/li>\n<li>Aceite para fre\u00edr<\/li>\n<\/ul>\n<dl>\n<dt>Primer paso: cocer las papas<\/dt>\n<dd>En abundante agua, hasta que un cuchillo no encuentre resistencia al pincharlas. Otra alternativa interesante es hornear las papas, ya que al cocerlas absorben agua.<\/dd>\n<dt>Segundo paso: convertirlas en pur\u00e9<\/dt>\n<dd>Con el pasapur\u00e9 y sin tanta fuerza como uno creer\u00eda<\/dd>\n<dt>Tercer paso: a\u00f1adir huevos<\/dt>\n<dd>A\u00f1adir 2 de los huevos, revolviendo hasta homogenizar. En esta etapa van la sal y el (optativo) merk\u00e9n. Si se revuelve demasiado y con mucho entusiasmo queda gomoso, as\u00ed es que se recomienda ejercer el autodominio.<\/dd>\n<dt>Cuarto paso:armar las papas<\/dt>\n<dd>Con las manos enharinadas para que no se pegue la masa a las manos. La idea es maximizar la relaci\u00f3n queso\/pur\u00e9, cuidando que el queso -u otro relleno- quede perfectamente cubierto para que no escurra al fre\u00edr. Este es un paso que requiere cuidado y un poco de ensayo y error.<\/dd>\n<dt>Quinto paso: el batido<\/dt>\n<dd>Preparar un batido con los dos huevos restantes y las dos cucharadas de harina.<\/dd>\n<dt>Sexto paso: fre\u00edr<\/dt>\n<dd>Pasar las papas por el batido y fre\u00edr en abundante aceite (por favor, no de palma) caliente pero no demasiado caliente (180\u00b0C), y luego drenar en papel absorbente. <strong>Se recomienda utilizar papel kraft. Absorbe el aceite que da gusto<\/strong>.<\/dd>\n<dt>S\u00e9ptimo paso: comer<\/dt>\n<dd>Esta es la parte f\u00e1cil. Podreis notar por las fotos que no se les puso az\u00facar flor, tan usual para algunas personas: cuesti\u00f3n de gustos.<\/dd>\n<dd><\/dd>\n<\/dl>\n<p style=\"text-align: left;\">Sumando y restando, las papas rellenas son m\u00e1s f\u00e1ciles y menos trabajosas de lo temido.
