{"id":665,"date":"2021-12-11T10:06:59","date_gmt":"2021-12-11T15:06:59","guid":{"rendered":"https:\/\/comer.me\/?p=665"},"modified":"2021-12-12T14:25:30","modified_gmt":"2021-12-12T19:25:30","slug":"espumas-solidas","status":"publish","type":"post","link":"https:\/\/le-fort.org\/cocina\/espumas-solidas\/","title":{"rendered":"Espumas s\u00f3lidas"},"content":{"rendered":"<p>Una espuma s\u00f3lida es una dispersi\u00f3n en que la fase continua es un s\u00f3lido y la fase dispersa un gas.<\/p>\n<p><!--more--><\/p>\n<p>Es frecuente que en culinaria las espumas s\u00f3lidas s epreparen mediante la deshidrataci\u00f3n de una espuma.<\/p>\n<p>Ejemplos frecuentes son:<\/p>\n<ul>\n<li>Soletillas (bizcotelas, galletas de Champa\u00f1a)<\/li>\n<li>Suspiros<\/li>\n<li>Bizcochos<\/li>\n<li>Dalgona.
