En general es as\u00ed, pero existen excepciones, como esta excepcional salsa de origen uruguayo: la <em>salsa Caruso<\/em>.<\/p>\n<p>Esta salsa fue desarrollada d\u00e9cadas despu\u00e9s de la muerte de Enrico Caruso \u2013cuyo apellido utiliza\u2013 por un restaurante de Montevideo, y se utiliza sobre todo con pasta rellena, como <em>capelletti<\/em> y ravioles. Se prepara de la siguiente manera:<\/p>\n<h2>Ingredientes<\/h2>\n<p>Para 400 grs. de pasta:<\/p>\n<ul>\n<li>250 grs. de champi\u00f1ones laminados<\/li>\n<li>2 cucharadas de mantequilla<\/li>\n<li>200 grs. de jam\u00f3n de pierna<\/li>\n<li>50 grs. de nueces picadas<\/li>\n<li>400ml. de crema de leche<\/li>\n<li>1\/2 cubito de caldo de carne<\/li>\n<li>1 cucharadita de maicena disuelta en 1\/2 taza de leche<\/li>\n<li>Sal, pimienta negra y nuez moscada molida a gusto<\/li>\n<li>Queso parmesano rallado, a gusto.<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<p>Mientras se cuece la pasta, saltear los champi\u00f1ones en la mantequilla, y cuando est\u00e9n blandos a\u00f1adir el jam\u00f3n y las nueces. seguir cocinando un par de minutos.<\/p>\n<p>Incorporar el medio cubito de caldo de carne y la crema.
