carnes en salsas espesas y tomatosas tan comunes en la cocina india, y tan variadas, tambi\u00e9n, a pesar de ser visualmente similares.<\/p>\n<h2>\u00a1Murgh Mughlai?<\/h2>\n<p><em>Murgh<\/em> quiere decir pollo. <em>Mughlai<\/em> es el estilo de preparaci\u00f3n.<\/p>\n<p>La cocina <em>mughlai<\/em>, es decir mongol, es el nombre que adopta una cocina del norte de India, porque lleg\u00f3 de la mano de los invasores mongoles de la Edad Media y tiene influencia de la cocina de Asia central. <a href=\"https:\/\/le-fort.org\/etiqueta\/mughlai\/\">Varias de las recetas que aqu\u00ed aparecen<\/a> son de esta cocina.<\/p>\n<p>VEamos en qu\u00e9 consiste el plato.<\/p>\n<h2>El sofrito<\/h2>\n<p>El sofrito de este pollo mughlai tiene especias un poco m\u00e1s &#8220;pesadas&#8221; que lo usual: mostaza, <a href=\"https:\/\/le-fort.org\/especias\/anis-estrella\/\">an\u00eds <\/a>y alcaravea, adem\u00e1s del omnipresente comino.<\/p>\n<p><img data-recalc-dims=\"1\" semillas de mostaza, y cuando comienzan a crepitar a\u00f1adimos comino, an\u00eds, alcaravea y las otras especias, tostando un minuto hasta que est\u00e9 fragante.<\/p>\n<p>El siguiente paso es a\u00f1adimos ajo y jengibre. y cocinamos un par de minutos m\u00e1s.<\/p>\n<h2>El pollo<\/h2>\n<p>Ahora a\u00f1adimos el pollo previamente sellado, el yoghurt, la salsa de tomates, la hoja de laurel Reservar<\/li>\n<li>En el mismo aceite, fre\u00edr las semillas de mostaza hasta que comiencen a crepitar. A\u00f1adir el resto de las especias y fre\u00edr un par de minutos hasta que est\u00e9n fragantes y un poco m\u00e1s oscuras.<\/li>\n<li>A\u00f1adir la cebolla y si se desea, el az\u00facar. Fre\u00edr hasta que se haya dorado.<\/li>\n<li>A\u00f1adir ajo y jengibre y cocinar un par de minutos<\/li>\n<li>A\u00f1adir el pollo, salsa de tomates, yoghurt, agua, laurel y menta.
