El recuerdo era de un postre muy delicado al comer, y tambi\u00e9n muy delicado al preparar, con el constante peligro de colapso. Nos pusimos manos a la obra y llegamos a una versi\u00f3n muy satisfactoria que compartimos con ustedes.<!--more--><\/p>\n<p>El mereng\u00f3n de caf\u00e9 es un postre tan simple como delicado: un merengue italiano al que se le a\u00f1ade alm\u00edbar de caf\u00e9 y se hornea brevemente. Contaba Cecilia que una navidad lo hab\u00edan tenido que preparar cuatro veces porque los tres primeros colapsaron al sacarlos del horno.<\/p>\n<p>Amedrentados por esta historia de terror, decidimos probar el postre, pero utilizando merengue suizo en vez de merengue italiano (<a href=\"https:\/\/www.le-fort.org\/la-ciencia-del-merengue\/\">aqu\u00ed est\u00e1n las diferencias<\/a>). La l\u00f3gica fue que al tener menos agua y un calentamiento m\u00e1s uniforme, el merengue ser\u00eda m\u00e1s resistente al temido colapso.<\/p>\n<p>Manos a la obra.<\/p>\n<p>Primero, el merengue suizo. Luego va a un molde de queque, de esos con forma de anillo, se hornea brevemente y se deja enfriar en el horno.<\/p>\n<p>El resto es literalmente, desmoldar y servir.<\/p>\n<p>Funcion\u00f3 a la perfecci\u00f3n, lo que nos alivi\u00f3 mucho. Compartimos la receta para que lo hagas en casa.<\/p>\n<h2>Ingredientes del Mereng\u00f3n de caf\u00e9<\/h2>\n<ul>\n<li>4 claras. Utilizaremos\u00a0las yemas para la crema inglesa.<\/li>\n<li>230gr az\u00facar<\/li>\n<li>1 cucharadita de esencia de vainilla<\/li>\n<li>1 pizca de cremor t\u00e1rtaro<\/li>\n<li>1 cucharada colmada de caf\u00e9 instant\u00e1neo disuelta en 3 cucharadas de agua caliente.
