Nada de tomate.<\/figcaption><\/figure>\n<p>Tiene l\u00f3gica: el tomate es una adici\u00f3n tard\u00eda a la cocina de India y Pakist\u00e1n, y el tomate suele ser m\u00e1s de <em>curry \u00a0house<\/em> brit\u00e1nico que de cocina tradicional. Vamos con este Rogan Josh m\u00e1s tradicional.<\/p>\n<h2>Ingredientes del Rogan Josh<\/h2>\n<ul>\n<li>500gr de cordero, limpio y trozado en cubos de unos 3cm de arista<\/li>\n<li>1 cebolla<\/li>\n<li>3 dientes de ajo<\/li>\n<li>Mezcla de especias:\n<ul>\n<li>1 cucharadita de jengibre en polvo<\/li>\n<li>5 vainas de <a href=\"https:\/\/le-fort.org\/especias-cardamomo\/\">cardamomo <\/a>verde<\/li>\n<li>1 cucharadita de canela (idealmente casia)<\/li>\n<li>1 cucharadita de <a href=\"https:\/\/le-fort.org\/semillas-de-hinojo\/\">semillas de hinojo<\/a><\/li>\n<li>1\/4 cucharadita de nuez moscada en polvo<\/li>\n<li>2 clavos de olor<\/li>\n<li>1\/2 cucharadita de pimienta negra molida<\/li>\n<li>1,5 cucharaditas de piment\u00f3n en polvo (paprika, aj\u00ed de color o similar)<\/li>\n<\/ul>\n<\/li>\n<li>3 cucharadas de yoghurt natural<\/li>\n<li>1 cucharadita de\u00a0comino<\/li>\n<li>4 cucharadas de mantequilla o <em>ghee<\/em><\/li>\n<li>1\/2 cucharadita de sal, o a gusto<\/li>\n<\/ul>\n<h2>Procedimiento<\/h2>\n<ol>\n<li>Moler todas las especias y colar el polvo para eliminar los trozos de c\u00e1scara de cardamomo, y trozos de lo que no se moli\u00f3. Cocinar hasta que dejen de oler a crudo, unos 3 minutos.<\/li>\n<li>A\u00f1adir\u00a0la sal y las especias. Revolver bien y a\u00f1adir 1\/2 taza de agua<\/li>\n<li>Cocinar tapado a fuego bajo por 45 minutos<\/li>\n<li>Destapar y agregar el yoghurt y el comino. Revolver bien.<\/li>\n<li>Cocinar otros 45 minutos destapado a fuego bajo revolviendo para evitar que se pegue. Cosa de preferencias.<\/li>\n<li>Hay que hacer la prueba con vacuno, pollo y otras carnes.
